–SAUCE:–

3 tbsp. butter or margarine
2 c. cubed ripe tomatoes
1/3 c. chopped onion
6 oz. can tomato paste
1 tbsp. basil leaves
1/2 tsp. salt
1/4 tsp. pepper
2 tsp. minced fresh garlic
3 whole boneless chicken breasts,
skinned, cut in half

–TOPPING:–

1 c. fresh bread crumbs
1/2 c. chopped fresh parsley
2 tbsp. butter or margarine, melted
6 oz. Mozzarella cheese, cut into
strips

Heat oven to 350 degrees. In 9×13 inch baking pan, melt 3 tablespoon butter in oven. In medium bowl, stir together remaining sauce ingredients except chicken; set aside. Place chicken in baking pan, turning to coat with butter. Spoon sauce mixture over chicken. Bake 30 to 40 minutes until chicken is no longer pink. Meanwhile, in small bowl stir together all topping ingredients except cheese. Place cheese strips over chicken; sprinkle with topping mix. Continue baking 5 to 10 minutes or until chicken is fork tender and bread crumbs are brown.

Ingredients:

* 4 Boneless/skinless chicken breast halves
* 1/4 tsp. salt
* 1/8 tsp. pepper
* 2 cups sauerkraut, rinsed and drained well
* 1 1/4 cups fat free Thousand Island salad dressing
* 4 slices fat free or low fat Swiss cheese
* 1 tablespoon chopped parsley

Directions:

Preheat oven to 325F. Coat a small glass baking dish with cooking spray. Arrange the chicken pieces in the dish. Sprinkle with the salt and pepper.

Cover the chicken with the sauerkraut, pour the dressing over the sauerkraut-top with the cheese slices and parsley. Cover and bake 1 hour or until the chicken is fork tender.

1 lb Chicken Breast Tenderloins (or any type of chicken cut into strips)
1 cn diced tomatoes (or if available use fresh tomatoes)
tarragon to taste (I tend to like a little more than most)
garlic to taste (again i like garlic)
basil to taste (We used one fresh leaf of basil as well as some dry basil, use fresh if you have it)
Parmesan Cheese to taste (used Kraft grated, but I would suggest using the real stuff if you can, would be much better)
Salt and Pepper to taste (freshly ground is what I used, and what I suggest)
Oil

Fry the chicken in a frying pan with 2 Tbl of oil.

In a sauce pan add tomatoes, tarragon, garlic, and basil. Bring to a boil, reduce heat and simmer unti the chicken is done.

Once the chicken is done place on plates, and spoon the tomatoe mixture on top of chicken. Then add grated Parmesan cheese on top. Serve and Enjoy.
